Oatmeal Protein Pancakes

I LOVE pancakes! I associate them with lazy weekend mornings but my husband loves to sleep in late on the weekends (he deserves it, he works WAY harder then me all week!) and I love to get an early work out in. By the time I'm done working out, and he's up, I've definitely mentally moved onto lunch foods. I wanted to be able to have quick, easy, weekday friendly pancakes that fit perfectly into a healthy diet. There are tons of recipes for this type of thing online but here's mine, which I think is the best!

Oatmeal Protein Pancakes
(makes 12 small pancakes)

Ingredients:
1/3 cup dry quick cooking oats
2 large eggs
1/2 cup 1% cottage cheeses
1 scoop quality protein powder (I used Optimum Nutrition 100% Whey in Vanilla)
1 tbsp water

Directions:
Blend all ingredients in a blender and cook over medium heat until golden, it's that simple. These can easily be frozen and then popped in the toaster on a busy morning. Add some berries or bananas, or try a little honey, maple syrup or peanut butter.
